The Mostarda Senapata of Quince Apples, also known as cotognata senapata, is a typical specialty of the Brescia area, a flagship, along with quince jam and chestnut cream, of the Andrini company in Gottolengo (BS) that has specialized in fruit processing for more than 80 years. Mostarda Senapata of Quince is made by processing quinces, with a sweet-acidic flavor, to which citrus peel and drops of mustard essence are added. Sweet and pleasantly spicy, it is extraordinary with mixed boiled meats and as an accompaniment to a cheese board.
